60 grams allulose (or you can use coconut sugar or normal sugar if preferred)
1½ tsp baking powder
½ tsp bicarbonate of soda
2 eggs
115 grams Greek yogurt
75 grams extra virgin olive oil

Directions
Preheat the oven to 180°C and line an 8-inch baking tin.
Add all ingredients to a large bowl and gently fold until just combined.
Pour the batter into the prepared tin and, if desired, sprinkle it with coconut sugar.
Bake for 20 minutes, then allow to cool slightly before slicing. Enjoy warm or cold.
Tips
Substitute Suggestion: You can substitute allulose with coconut sugar. Using this will increase the sugar content significantly, approximately 6-8g per slice.
Storage Instruction: This can be kept in a sealed container for 3 days but best kept in the fridge for up to 5 days.
