These High-Protein Christmas Cookies are a cosy treat for winter, made with a light vanilla protein dough and a subtle cinnamon twist. Dip them in rich dark chocolate and finish with some seasonal sprinkles for a luxurious homemade cookie.

Quick to prepare and a joy to share, they’re perfect when you want a sweet but nourishing treat this Christmas. 

Ingredients

  • 120g buckwheat flour 
  • 1.5 tsp baking powder 
  • 3 scoops (37.5g) Madagascan Vanilla Organic Whey Protein 
  • 90g unsalted butter
  • 80ml clear honey
  • 2 tsp ground cinnamon 

    Optional festive toppings:
  • 90g dark chocolate 
  • 1 tsp coconut oil (mix with the dark chocolate for a smooth finish)
  • 25g festive sprinkle decorations

Directions

  1. Pre-heat oven to 175 °C / 347 °F.
  2. Mix the dry ingredients together in a bowl (buckwheat flour, baking powder, Madagascan Vanilla Organic Whey Protein, and ground cinnamon).
  3. Melt the butter - aim for just melted, not bubbling.
  4. Stir the melted butter and clear honey into the dry mix until a dough forms.
  5. Leave the dough to rest for 2-5 minutes.
  6. Roll out the dough and cut into 12 cookies.
  7. Bake for around 7 minutes, or until lightly golden on the edges.
  8. Let the cookies cool completely for at least 20 minutes.
  9. Melt and mix the dark chocolate with the coconut oil.
  10. Dip each cookie into the melted dark chocolate, place on a lined tray, then add your chosen sprinkles.
  11. Chill for around 10-15 minutes until the chocolate sets. Enjoy!
