These warmly spiced whey protein muffins have the comforting flavour of cinnamon, balanced with the natural sweetness of honey and sweet potato.

They’re rich, delicious, and full of wholesome ingredients, boasting over 10g of protein per muffin thanks to our Pure Unflavoured Organic Whey Protein.

A great make-ahead option for cosy mornings, packed lunches, or a nourishing snack that feels just a little bit festive.

Ingredients

  • 1 cup ground almonds (240ml / ~96g)
  • 4 tsp cinnamon powder (8g)
  • 4 tsp honey (20ml / ~28g)
  • 1 cup sweet potato purée (240ml / ~225g) — can substitute with pumpkin or apple purée
  • 5 scoops (62.5g) Pure Unflavoured Organic Whey Protein
  • 2 tsp baking powder (10ml / ~8g)
  • 1 cup melted coconut oil (16 tbsp / 240ml / ~220g)
  • 1 cup almond butter (16 tbsp / 240ml / ~250g)

Directions

  1. Preheat the oven to 180°C and line or lightly grease 12 muffin moulds.
  2. Add all ingredients to a blender or large mixing bowl.
  3. Blend or mix thoroughly until smooth and evenly incorporated.
  4. Pour batter evenly into the prepared muffin moulds.
  5. Bake for 40 minutes, or until the tops are set and lightly golden.
  6. Allow to cool before removing from moulds.
