Sweet Potato and Goat’s Cheese Whey Protein Bread

It’s not quite cake, not quite bread, but definitely one worth making!

This loaf combines roasted sweet potato, the tang of goat’s cheese, and a herby depth that makes it feel more like a purchase from the deli counter than a protein recipe.

It’s made with real food, no additives, and has the added benefit of Pure Unflavoured Organic Whey Protein, making it as nourishing as it is flavourful. Toast it, layer it, top it, love it.

Ingredients

  • 240g sweet potato (about 1 medium-large sweet potato), cooked and mashed
  • 100g hard goat's cheese (about 1 cup finely grated)
  • 1 tbsp Herbs de Provence (15ml / ~2g)
  • 4 scoops (50g) Pure Unflavoured Organic Whey Protein
  • ¼ cup olive oil (60ml / ~55g)
  • ¼ cup melted coconut oil (60ml / ~55g)
  • ¼ cup water (60ml)
  • 2 tbsp psyllium husk powder (30ml / ~14g)
  • ½ cup sunflower seeds (120ml / ~70g) — or mixed seeds
  • Salt, black pepper, and chilli to taste

Directions

  1. Preheat the oven to 180°C and line a bread tin with baking paper.
  2. Mix all ingredients together using your hands (honestly, it's easier) or a spatula until well combined.
  3. Pour the mixture into the prepared bread tin.
  4. Bake for 45 minutes or until cooked through and golden on top.
  5. Allow to cool before slicing and serve with butter, tomatoes, soft goat's cheese, or any other favourite topping.
