Chai Protein Pancakes with Cinnamon Yoghurt

Fluffy, warmly spiced and full of comforting flavours, these chai protein pancakes combine buckwheat flour with Madagascan Vanilla Organic Whey Protein. Stack them high with creamy whipped cinnamon yoghurt, a drizzle of maple syrup and an extra dusting of cinnamon for a breakfast worth slowing down for. They’re easy to make ahead, too - simply reheat them in the toaster before serving.

Ingredients

  • For the pancakes:
  • 50g buckwheat flour
  • 25g (2 scoops) Madagascan Vanilla Organic Whey Protein Powder
  • 1½ tsp baking powder
  • 2½ tsp chai spice*
  • 1 egg
  • 120ml milk
  • Butter or oil, for cooking
  • For the topping:
  • 150g Greek yoghurt
  • 1½ tsp ground cinnamon
  • 1 tsp honey (optional, to taste)
  • To serve:
  • Maple syrup for drizzling
  • A little extra ground cinnamon
  • *For the chai spice: 1 tsp ground cinnamon, ½ tsp ground ginger, 1 tsp ground cardamom, and a pinch of ground nutmeg.

Directions

  1. Add the buckwheat flour, Madagascan Vanilla Organic Whey Protein, baking powder and chai spice to a bowl and mix together.
  2. Add the egg and milk, then whisk until you have a smooth batter. Leave to rest for a couple of minutes.
  3. Heat a little butter or oil in a non-stick frying pan over a medium heat. Spoon in the batter to form small pancakes and cook for 2-3 minutes or until bubbles begin to appear and the edges are set. Flip and cook for a further 1-2 minutes, until golden and cooked through.
  4. To make the whipped cinnamon yoghurt, whisk the Greek yoghurt, cinnamon and honey until smooth and creamy.
  5. Stack the warm pancakes and spoon over the cinnamon yoghurt. Finish with a drizzle of maple syrup and a dusting of extra cinnamon, then serve straight away.

  • Preparation Tips: For light, fluffy pancakes, avoid overmixing the batter. Keep the heat at medium so the pancakes have time to cook through without browning too quickly.
  • Substitute Suggestion: Use your preferred milk, whether dairy or plant-based. You can also swap honey for maple syrup in the cinnamon yoghurt, and adjust the sweetness to suit your taste.
