Directions

  1. Preheat the oven to 200°C (180°C fan). Lightly grease and line a small rectangular baking dish (approximately 20 x 15cm) with baking parchment.
  2. In a mixing bowl, whisk together the pumpkin purée, milk, egg and maple syrup until combined.
  3. Add the porridge oats, Pure Unflavoured Organic Whey Protein and mixed spice. Stir until evenly combined.
  4. Pour the mixture into the prepared baking dish and spread into an even layer.
  5. Bake for 25-30 minutes, or until the centre is set and the edges are lightly golden.
  6. Remove from the oven and leave to cool completely.
  7. To make the optional frosting, mix the Greek yoghurt, maple syrup and cinnamon until smooth and creamy.
  8. Once the baked oats have cooled, spread the yoghurt frosting evenly over the top.
  9. Slice into 6 squares and serve. Finish with chopped pecans and a drizzle of maple syrup, if desired.

Tips

  • Preparation Tips: There’s no need to blend the oats. Using ordinary oats gives the bake a lovely soft, rustic texture.  For neater slices, chill briefly before cutting.
  • Substitute Suggestion: Use your preferred dairy or plant-based milk, bearing in mind that substitutions may change the nutritional values. For extra crunch, finish with chopped pecans or walnuts. Alternatively, leave the nuts out if preferred.
  • Storage Instruction: Store in an airtight container in the fridge for up to 3 days. Keep the yoghurt frosting in a separate container. The unfrosted baked oats can be frozen for up to 2 months. Defrost overnight in the fridge before serving.

These Pumpkin Spice Protein Baked Oats make a delicious change from your usual bowl of porridge or overnight oats. Make a batch ahead for easy breakfasts, or serve with the frosting and nuts for a mid-afternoon snack or dessert.
