Directions

  1. Preheat the oven to 180°C, then slice the bananas and place on a baking tray. 
  2. Brush each banana slice with a small amount of olive oil and drizzle with a little of the honey. You’ll need less than half of the oil and honey for this step - save the rest for the granola. 
  3. Bake the banana slices for 15 minutes or until the tops are beautifully caramelised. 
  4. Put the oats, chopped walnuts, and the rest of the olive oil and honey in a small saucepan. Cook on the hob over a medium heat for about 5-7 minutes, until golden and toasted. Keep mixing to prevent burning.
  5. Whisk together the Greek yoghurt and Madagascan Vanilla Organic Whey Protein powder
  6. Layer the yoghurt, oat mixture and bananas in a glass or jar in your preferred order. For a lovely finish, save a couple of slices of caramelised banana for the top.
  7. Enjoy immediately.
