When our organic cheese makers start making their cheese, the milk is first separated into whey and curds. The curds then go on to be turned into cheddar, leaving behind the whey which then goes through a simple two-stage process, resulting in a high quality whey protein powder.

  1. The whey goes through a gentle low temperature filtration process to remove most of the lactose and water, leaving behind protein and minerals, plus a small amount of butterfat.
  2. The resulting whey protein is spray dried at low temperatures, turning it into a powder.

It's as simple as that; nothing is added and the only parts of the whey that are removed are lactose and water, thereby retaining the numerous beneficial properties of the whey.
